蘋果酥卷 Apple Strudel

材料

紅蘋果 1個

青蘋果 1個

提子乾 60克

麵包糠 80克

砂糖 35克

肉桂粉 1½湯匙

牛油 少量

忌廉 少量

糖霜 少量

酥皮 2塊

雞蛋 1只

吉士粉 1茶匙

水 5茶匙

酥餡做法
  1. 將紅青蘋果去皮切粒

  2. 開火後放入蘋果粒,提子乾,牛油,糖,肉桂粉,麵包糠,炒至軟身取起備用

蛋漿做法
  1. 將吉士粉、水、忌廉和1/3只蛋液混合搞勻,用慢火煮成黏狀

酥卷做法
  1. 將酥皮1開2,放入餡料卷起便可

  2. 預熱焗爐至180°,將蛋液掃在酥卷面,焗25分鐘

  3. 取出,切成一件件,灑上糖霜,再伴上蛋汁便成


Ingredients

1 pc Red apple

1 pc Green apple

60g Dried raisins

80g Bread crumbs

35g Sugar

1½ tbsp Ground cinnamon

Pinch Butter

Pinch Cream

Pinch Icing sugar

2 sheet Puff pastry

1 Egg

1 tsp Custard powder

5 tsp Water

Filling Steps
  1. Peel the apples and dice into small pieces

  2. In a pot, combine the apples with raisins, butter, sugar, cinnamon and bread crumbs. Stir fry until apples soften

Custard Sauce Steps
  1. Combine custard powder, water, cream and egg. Mix well. Cook with slow heat until the sauce thicken

Apple Strudel Steps
  1. Cut the puff pastry into half. Spoon the filling into the central section and roll it

  2. Pre-heat oven to 180°. Lightly beat an egg and brush on the roll. Bake for 25 minutes

  3. Remove from the oven, cut the rolls into pieces , sprinkle with icing sugar and serve with the custard sauce
