蝦米節瓜粉絲煲 Dried Shrimp, Hairy Gourd, Vermicelli Pot

材料
節瓜 200克
粉絲 80克
蝦米 40克
蒜頭 4粒
油 2湯匙
調味料 (粉絲)
油 1茶匙
蒜蓉 1茶匙
紹興酒 1湯匙
清水 400毫升
砂糖 1茶匙
鹽 1/2茶匙
調味料
魚露 1茶匙
砂糖 1茶匙
麻油 1湯匙
蝦米水 400毫升
做法
把節瓜去皮後切絲
將蝦米清洗後用凍水浸15分鐘,然後隔水取岀,隔出來的蝦米水留起備用
之後處理粉絲,先用凍水浸15分鐘,隔去水份
接著起鑊,先落油,然後放蒜蓉炒香,再放紹興酒、清水、砂糖和鹽,滾起後倒入粉絲中浸15分鐘,15分鐘後將粉絲隔去水份備用
之後再起爐,先將蝦米爆香,然後取出備用
取出蝦米後落油,先放蒜頭爆香,再放節瓜炒至軟身,然後放蝦米,再放調味料,最後放粉絲,炒勻後便可上碟

200g Hairy Gourd
80g Vermicelli
40g Dried Shrimp
4 Garlic
2 tbsp Oil
Seasoning (Vermicelli)
1 tsp Oil
1 tsp Garlic
1 tbsp Shaoxing Wine
400ml Water
1 tsp Sugar
1/2 tsp Salt
Seasoning
1 tsp Fish Sauce
1 tsp Sugar
1 tbsp Sesame Oil
400ml Dried Shrimp Water
Steps
Peel off the hairy gourd and cut into shreds
Wash the dried shrimps and immerse them in fronen water for 15 minutes, then take out from the water and leave the separated shrimp water for spare
Process the vermicelli, first immerse them in frozen water for 15 minutes, separate from the water
Then heat the pot with oil, then add the garlic, then put Shaoxing wine, water, sugar and salt, boil it up and pour the vermicelli into it for 15 minutes. After 15 minutes, separate the vermicelli from the water
Heat the pot again and add the dried shrimp, take it out
After removing the dried shrimp, drop the oil, first put the garlic to the scent, then put the hairy gourd and stir-fry until soft, then put the dried shrimp again, then add seasoning, and finally put the vermicelli, stir well and then serve on dish
