香橙骨 Pork Ribs with Orange Sauce
材料
肋排 半斤(斬1.5寸長)
橙酒 1湯匙
排骨醃料
砂糖 1/2茶匙
鹽 1/2茶匙
麵粉 2茶匙
吉士粉 2茶匙
水 1湯匙
鮮橙汁 2湯匙
橙酒 1湯匙
香橙汁
橙皮 90克(不要白色)
吉士粉 4茶匙
白醋 90毫升
水 90毫升
砂糖 90克
鮮橙汁 150毫升
做法
先將醃料內的砂糖、鹽、麵粉、吉士粉和水先攪拌,放入排骨攪勻
然後加入醃料內的鮮橙汁和橙酒攪拌均勻後醃30分鐘
之後將香橙汁的所有材料加入攪拌機中攪拌,直至橙皮變成茸
接著開鑊落油,以半煎炸形式將排骨煎熟,然後取出備用
之後可以煮香橙汁,把香橙汁倒入鑊中,煮滾至稠身,再放入排骨炒一炒
最後加入1湯匙橙酒炒勻,便成
Ingredients
300g Spare Ribs (cut into 1.5” long)
1 tbsp Orange Flavoured Liqueur
Marinade of Ribs
1/2 tsp Sugar
1/2 tsp Salt
2 tsp Flour
2 tsp Custard Powder
1 tbsp Water
2 tbsp Fresh Orange Juice
1 tbsp Orange Flavoured Liqueur
Sauce
90g Orange Peel (shredded, without white skin)
4 tsp Custard Powder
90ml White Vinegar
90ml Water
90g Sugar
150ml Fresh Orange Juice
Steps
Prepare the marinade first, mix the sugar, salt, flour, custard powder with 1 tbsp of water. Put in the spare ribs chunks and mix well
Then add the portion of orange juice and orange flavoured liqueur listed under the marinade part into the spare ribs, marinade for 30mins
Now, prepare the orange sauce. Put all the sauce ingredients into a blender, mix into orange sauce
Put some oil into a wok, pan-fry or fry the spare ribs until done, put aside
Now pour the orange sauce into a work, cook until the sauce is thicken and sticky. Drop the ribs it and stir fry
Finally add 1 tablespoon of orange flavoured liqueur. Ready to serve
