碧綠繽紛炒龍躉球 Sauteed Grouper with Vegetables
材料
龍躉仔 1條(起肉)
洋蔥 半個
紅黃椒 適量
鮮露筍 4條
鮮淮山 半枝
雲耳 半両(浸軟)
薑 適量
乾葱 適量
蒜頭 適量
蔥段 適量
鹽 1/4茶匙
糖 1/4茶匙
水 3湯匙
麻油 少許
醃料 (魚片)
鹽 1/4茶匙
糖 1/4茶匙
胡椒粉 少許
粟粉 1/2茶匙
麻油 適量
茨汁
水 3湯匙
蠔油 1湯匙
粟粉 1/2茶匙
做法
先把龍躉魚起肉,切成魚片
然後將魚片加入鹽、糖、胡椒粉、粟粉、麻油後略醃10分鐘
把雲耳放入水中浸至軟身
接着將洋蔥切絲,紅黃椒切小塊,鮮露筍斜切,鮮淮山切片(切好後要放入水中)
將薑切片,蒜頭切粒,乾蔥切絲,蔥切段
先開大火,落油,放入魚片煎至金黃色後撈起備用
之後落油,放入薑、乾蔥、蒜爆香,炒出香味後放雲耳
再放洋蔥炒一炒,然後落鮮露筍、鮮淮山
加入適量鹽和糖調味,然後加大約3湯匙水煮一煮
收水後加入紅黃椒炒一炒,再放少許麻油,之後加入茨汁
茨汁收乾少許後就可放入魚片炒勻上碟,完成

1/2 pc Fresh Chinese Yam
1/2 tael Black Fungus (Soften)
Pinch Ginger
Pinch Shallot
Pinch Garlic
Pinch Green Onion
1/4 tsp Salt
1/4 tsp Sugar
3 tbsp Water
Pinch Sesame Oil
Seasoning (Fish Fillets)
1/4 tsp Salt
1/4 tsp Sugar
Pinch White Pepper Powder
1/2 tsp Corn Flour
Pinch Sesame Oil
Sauce
3 tbsp Water
1 tbsp Oyster Sauce
1/2 tsp Corn Flour
Steps
Cut fillets out from grouper into slices
Season fillet slices with salt, sugar, white pepper, corn flour and sesame oil for 10 minutes
Soak the black fungus in a bowl of water until soften
Slice the onion, cut the red and yellow pepper into small pieces, asparagus into spears, fresh Chinese yam into slices (then soak in a bowl of water)
Slice the ginger and shallot, mince the garlic and cut the green onion into spears
Pan fry fillet slices over high heat with some oil until golden brown. Put aside
Add some oil into the pan, put in ginger, shallot, garlic and pan fry until smell comes out, add in black fungus
Then put in onion, fresh asparagus and fresh Chinese yam, stir fry
Add some salt and sugar to taste, then add 3 tbsp water and cook for a while
Put in red and yellow pepper and stir fry, add some sesame oil and the sauce
Cook until the sauce becomes thicker, add back the fillet slices and stir well. Ready to serve
